Juice was clarified using flotation technology and a selected yeast strain was used. For our non-oak Chardonnay a cold ferment is used to maintain a crisp acidity and fruitiness. Fermentation was completed in 10 days and no malolactic fermentation was done on this wine." Roberto DiDomenico Winemaker. Price $ 12.95
