There is a group of villages in the Coteaux du Layon AC that, due to the superior quality of their terroir, are allowed to append their names to the appellation. Saint-Aubin is one such village. Coteaux du Layon wines used to be overly sweet and confected. But in the mid-1990s, producers such as Domaine Cady began picking fruit earlier, resulting in dessert wines that are now recognized as medium sweet, balanced, and highly quaffable. Serve chilled with mature cheeses. |
