What the Italians know as grappa and the French call marc is bagaceira to the Portuguese. Bagaceira is produced in both a clear, unoaked variety, as in this example, and an oak matured style that imparts a distinctive colour to the final product. Serve this as you would a grappa, as an aperitif or digestif. |
