Vintage Assessments Tasting Note Producer Cave Spring
Light yellow colour. Lovely, complex, intense, sweet and sour lemon drop nose with some honeyed caramel notes. Solid, sweet but balanced, rich, viscous, spicy, lemon meringue pie and caramel-vanilla ice cream flavours. Has excellent acidity on the finish that keep the wine balanced. It has 190 grams of residual sugar and 38% of the grapes were botrytis affected. CSPC 447441

Cave Spring cellars their Icewines for a full year in bottle prior to release. The 2006 vintage shows a superb balance of fruit and acids, suggesting excellent potential for mid-term ageing (6-8 years+). It is also enjoyable now with foie gras, lemon flan or aged cheeses. Price $ 59.95
