Light reddish pink colour. Very slightly sweet, gently honeyed, plummy, ripe melon nose. Gently sweet, harmonious, medium-light bodied, ripe, plummy flavours with some apple puree notes and a lingering very pleasant, effervescence finish. This blend of 55% Chardonnay, 35% Pinot Noir and 10% Cabernet Franc is made in the classic champagne method by aging in the bottle on the lees (12-14 months) with the addition of a sweet dosage of Cabernet Franc and Vidal Icewine after the degorgement. Has 22 g/l og sugar and total acidity of 8.7 g/l. CSPC 113035

TASTING NOTE: ... Speaking of flavours, this one has a wow mouth factor strawberries and that includes: honeyed strawberries and a lengthy lingering red fruit finish. It smells sweeter than it tastes and that’s because of those persistent bubbles, which manages to tone things down. This is the old Ice Cuvee with a twist – the addition of the Franc for fruitiness and the reemergence of an icewine dosage you can taste ...
