Although legally XO Cognacs must be aged six years in barrel, many producers will mature theirs substantially longer (some upwards of 25 years). This one is matured for at least 10 years (part of the blend is much older). It’s remarkable in another way in that the grapes are grown, and the product is distilled and matured, on the French island of Oléron which is considered part of the Cognac region. Expect a hint of saltiness along with the vibrant and fresh fruit tones. |
