Both Chile and Peru claim Pisco as their own. Peru’s briefing paper on the issue states: “Pisco is as Peruvian as llamas and ‘arroz con pollo.’ Peruvians hold a deep-seated national pride for Pisco, which they make [i.e. distill] from the cream of the grape harvest and have been drinking it at parties and festivals for over 400 years.” Regardless of who created it, the classic cocktail is the Pisco Sour (recipes can be found in cocktail books or on the internet).
