Medium yellow colour. Spicy, honeyed, sweet caramel nose. Dry, intense, slightly peppery, honeyed, ripe plummy-caramel flavours with a lingering, vibrant, high acid, firm finish. Try cutting this with some filtered water. Interesting but not inexpensive. CSPC 250183

TASTING NOTE: Uses Icewine barrels from Nova Scotia’s Jost Winery. Aromas include dried fruits, honey, poached pear, vanilla bean and tropical fruit tones. As this is cask strength (54.6%/vol.), without water it is dry, very hot and yet still very fruity and alive. With a thimble or two of water, it is still quite dry, the heat is gone and the fruit is still vibrantly present, with a smoothed-out texture and an even longer finish than without water.
