Caraway is the principal ingredient in ‘Linie’ Aquavit, but that only partially explains its taste. It is matured in 5- to 10-year-old Oloroso sherry casks, thus giving it an elusive ‘nutty’ tone. Plus, to qualify for the ‘Linie’ designation, the product must cross the Equator in a ship twice (as deck cargo). This example was aboard the M/S Toba and crossed the Equator on April 15, 2001 and the second time on August 21, 2001. The salt sea air, the rolling of the ship, the heat of the Equator (and the cool of the North Atlantic portion of the trip) and the oxidation that occurs through the barrel, all contribute to the product’s unique taste. The producer recommends using the product in and serving it with a salmon marinated in aquavit, kosher salt, sugar, caraway seeds and aniseed. |
