According to general consensus, Nonino is one of the finest and most important distilleries in Italy. But, above all, Nonino is credited with having been a dynamic trendsetter in the development of Grappa into a luxury product … Many of the innovations in the industry over the last thirty years have come from this inventive firm. (Axel and Bibiana Behrendt, Grappa, 1999) Nonino was the first to distill pomace and fresh fruit only around harvest time and amongst the first to distill strictly from fresh juice and not just the pomace. It is this technique, and the use of small copper stills, that allows the Moscato spirit (Muscat, to the French) to retain much of the aromatic varietal character for which the grape is known. |
