This small-production pink Californian sparkler, made in the traditional method of Champagne, has a truly exciting history. Domaine Chandon began 42 years ago when Moet & Chandon (makers of Dom Perignon) recognized and invested in California's potential for producing superior sparkling wine. Comprising Chardonnay and Pinot Noir grapes, this spends a year on the lees gaining mellow complexity. The producer suggests pairing it with seafood, shellfish, duck and lamb. Price $ 32.95
