Forward medium yellow colour. Rather intense, sweet, honeyed, slightly botrytised (sourish butterscotch notes), sweet caramel, sour cherry and baked Anjou pear on the nose. Sweet, viscous, rich, medium full bodied, creamy and yet bright, caramelized apples and candied lemon peel flavours with very good length. CSPC 591321

A couple of years ago, winemaker Ann Sperling attended a tasting at The Twisted Fork in Oakville, Ontario. Chef Michael Killip created a dessert that Sperling proclaimed one of the best matches for Icewine she had ever tried.
