Kirsch is the oldest of the fruit eaux-de-vie, but Poire William — made with William pears — is the most recent and probably most popular of this style of spirit. To make the spirit, the pears must be fully ripe. Regulations in Alsace stipulate that 28 kg of pears must be used to obtain one litre of pure pear eau-de-vie. An an after-dinner digestif, Poire William should be slightly chilled and served in a snifter to enhance its vibrant essence. Price $ 29.90
