Clear colour. Absolute essence of sweet ripe Anjou (obviously in this case Alsace) pear. Perfectly balanced, rounded, creamy, gently sweet, gorgeous pear flavours. An after-dinner classic, it rarely gets better than this. By the way, it takes at least 28 kg of pears to obtain one litre of pure pear eau-de-vie. |

Kirsch is the oldest of the fruit eaux-de-vie, but Poire William — made with William pears — is the most recent and probably most popular of this style of spirit. To make the spirit, the pears must be fully ripe. Regulations in Alsace stipulate that 28 kg of pears must be used to obtain one litre of pure pear eau-de-vie. An an after-dinner digestif, Poire William should be slightly chilled and served in a snifter to enhance its vibrant essence. |
