Light golden amber colour. Attractive, very spicy, honeyed, plummy, caramel nose with some cinnamon notes. Dry, medium bodied, spicy, harmonious, plummy, caramel flavours with some cinnamon heart notes on the lingering finish. Distilled in Chicago, it has a hefty 47% alcohol. Barrel #1190. The only disappointment is the LCBO price - the current average price in the US is $63 CND. At South Lyndale Liquors, it’s on sale for $39.99 US a bottle.

Founded in 2008, Koval is the first operating distillery in Chicago since Prohibition. That alone would make them interesting, but this craft distiller has upped the ante even further: all of their offerings are single-barrel whiskies and are created using organically grown corn and millet. Millet is a grain most often associated with Asia or Africa, but here it helps imbue this Bourbon with a fine vanilla quality. The barrels used to age the Bourbon also receive a high degree of charring, providing additional complexity to the fruit and caramel notes throughout. |
