TASTING NOTE: Amaro Sibilla is fresh, light-bodied, pungently aromatic and softer, gentler, more elegant than the northerly amari we're used to sipping here. The lighter weight actually emphasizes the bitterness in the faint and ghostly finish, but it mingles and balances so nicely with the tones of honey --- think about the balance of the Tao endlessly spinning --- that neither element is intrusive. On the nose and palate, there are intense aromas and flavors of coffee, vanilla, walnut skin and roasted chestnuts mingled with dried fruits, all laced with honey.
