Aguardente de bagaceira or bagaceira is a water-white spirit distilled from Bagaço, the grape skins and pips left over from the fermentation of wine, in the manner of the French marc or Spanish orujo… Some of the best and freshest-tasting is made in the Bairrada, where it is the custom to distill the Bagaço while still moist from the wine presses … A good tip is to serve [it] in a brandy glass with a lump of ice, when I have found them delicious as a digestif after dinner.
