Tasting note: From pomaces of grapes from the Tignanello vineyard in the Chianti Classico region, near Mercatale Val di Pesa. Twenty percent cabernet sauvignon, 80% sangiovese. The pomace was fermented with the must and distilled with steam at the distillery in Casciano Val di Pesa. A restrained, bittersweet aroma with a breath of autumn – mushrooms, hay, herbs. Subdued strength in its nobly bitter taste, which builds to a long, vibrant finish. A noble brandy of elegant discretion. (Axel and Bibiana Behrendt, Grappa, 2000) |
