This is the result of a collaboration between Sherry producer González Byass and master distiller Richard Paterson. Paterson is the man behind Dalmore and has been a leading contributor to the world of whisky for over 50 years. He's in great demand as a teacher and consultant, and his talents have earned him the nickname \"The Nose.\" This unique whisky is made from a selection of over 30 malt and grain whiskies aged between five and eight years. These are then blended and matured in Sherry butts in Scotland for three years before being shipped to Jerez to undergo a further year maturation in Pedro Ximénez casks. |
