Medium-deep amber colour. Attractive (my favourite of the three), complex, slightly spicy, warm, plummy, brown sugar nose with lots of caramel notes along with a slight hint of airplane glue. Dry, medium-full bodied, well structured, harmonious, ripe spicy, honeyed, brown sugar, caramel flavours with a lingering, high acid, smooth finish. My favourite of the three Single Still Demerara Rums being released, Versailles is distilled in a single wooden pot still made from greenheart wood. Has 40% alcohol with lot number JUN/14/18 located on the neck of the bottle. CSPC 617514

The El Dorado Versailles Single Still Demerara Rum is distilled in a single wooden pot still. The greenheart wood used for the still, also known as Demerara greenheart, is native to Guyana and is farmed for its durability. In the 1920s, the polar exploration ships Fram and Endurance, of Amundsen and Shackleton fame, each had a layer of greenheart wood affixed to their hulls to help protect them from ice damage. Rums produced from this still are intense and full-bodied with a noted aromatic character. Price $ 87.95
