As if making Icewine weren’t already difficult enough, Inniskillin raises the bar by adding sparkle. The Charmat method calls for the wine to be pumped into pressurized tanks where it unites with the naturally occurring CO2. The unique properties of the CO2 add a pleasant dryness to the wine that broadens its food-matching capabilities. Food match: pan-seared foie gras, spicy Asian cuisine, fruit flans, aged cheeses.
