Cave Spring holds their Icewines a full year in bottle at the winery prior to release, in order for the wine to come into its own. The 2002 vintage shows superb balance between the fruit and the acids, suggesting excellent potential for mid-term ageing (6-8 years+). It is also enjoyable now with foie gras, lemon flan or aged cheeses. Tasting note: Serious stuff here, with a sweet/tart component that has my dentist rubbing his hands with glee. Unctuous and packed with apricot, mandarin orange and ruby grapefruit flavors that remain focused and vivid, then melt away on the lingering finish. Drink now through 2008. Score – 92.
