One of the iconic images of the liberation of Normandy in World War II is of local residents racing to their backyards to dig up cases of Calvados in order to give bottles to the passing Allied troops. They had buried them at the start of the Nazi occupation to prevent the Germans from getting their hands on them. This legendary drink is distilled only from the tiny perfect cider apples that seem to exclusively grow in this northern French region. In order to be called Calvados Pays d'Auge, all the apples must come from orchards in the Pays d'Auge region. Enjoy Calvados XO neat from a snifter, especially as a warmer upper after a bout of outdoor winter activities. It is also a popular ingredient in many roast chicken and sautéed veal dishes. |
