Light golden yellow colour. Very intense, sweet, rich, honeyed, spicy, herbal, green Chartreuse and star anise nose. Just off dry with very intense, floral, spicy, black licorice flavours followed up by some peppery notes resulting from the high alcohol (45%). The word ‘Pastis’ apparently means mélange or blend in Provençal and this formula contains nutmeg, cinnamon, thyme, clove, sage, cumin, mace, gentian, savory, white and black pepper, and star anise. Try it straight or mixing it (one part Pastis) to four parts ice water. Last seen here in the June 7, 2003 release at $29.95. CSPC 951368

Considered the connoisseur’s Pastis, Henri Bardouin is a great product. If you want to enjoy it as the French do, present each of your guests with a shot of Pastis in a heavy-bottomed glass. Then pass around a ceramic jug filled with chilled water. As water is added to the Pastis it turns a lovely milky colour. When served in the proper proportions of water to spirit (approx. 4 to 1), the resulting beverage has about 6% alc./vol. Food match: olive tapenade and toast. Price $ 35.95
